Apimedica: Antioxidant Activity of Royal Jelly Protease Hydrolyzate in vitro - 蜂王浆蛋白酶解物体外抗氧化活性的研究

The health care function of royal jelly is mainly reflected on its antioxidant capacity, and its functional active ingredients are, in a large extent, related with its unique protein. Royal jelly protein is absorbed through the enzymolysis of pepsin, trypsin, and chymotrypsin into peptides. By determining the radical scavenging ability, hydroxyl radical scavenging ability, reducing ability and anti-lipid oxidation ability of the royal jelly protein hydrolyzate on DPPH, the best water resolutions for DPPH’s free radical scavenging ability, hydroxyl radical scavenging ability, reducing power ability and anti-lipid peroxidation ability were obtained. And the best water resolutions were 4.18%, 4.50%, 4.18%, and 4.50% respectively for the abilities mentioned above.

蜂王浆的保健功能主要体现在其抗氧化能力上,其功能活性成分又很大程度上与其所特有的蛋白质有 关。王浆蛋白通过人体的胃蛋白酶、胰蛋白酶、胰凝乳蛋白酶酶解成多肽在人体吸收利用。由通过王浆蛋 酶解物DPPH 自由基清除能力、羟自由基清除能力、还原力和抗脂质过氧化能力的测定,得出DPPH 自由基清除能力、羟自由基清除能力、还原力和抗脂质过氧化能力的最佳水解度分别为4.18%4.50%4.18%4.50%
